organic olive cultivation


The farm has got about 9 hectares of olive groves, on the hill of Frascole (altitude between 300 and 500 metres above the sea level).

The soil has got a clayey composition originated by the decay of the “Marl of Vicchio”.

The most numerous variety is Frantoio, then there is Leccino, Pendolino and Moraiolo.

The olive growing is completly organic since 1999: the altitude of the farm and the lack of other intensive olive cultivations nearby allows us to avoid antiparasitic treatments.

The olives harvest is completely done by hand when the olives are still not well ripe. Usually it starts at the end of October and it finishes within the end of November.

The olives are pressed immediately after the harvest in order to keep all the aromatic components and the acidity level very low.

Free acidity percentual:   0,09 – 0,12 %
